We’ve had two back-to-back days of sunshine in New Hampshire and I’m full blown summer ready, people! It’s like Mother Nature is finally getting tired of being grey, cold, and dreary. It takes more muscles to frown than to smile anyway, right?!
So today I did some grocery shopping for the week and found myself making this no fuss, fail-proof side dish– sipping on a bubbly cider, music playing, windows open, thinking of summer BBQs at our house–heaven.
My Auntie Dona makes something very similar and I always stuff myself on it at family parties. Avocado, kidney beans, corn, cucumbers and some more delicious ingredients….Below is everything you need! Enjoy on its own or with chips. I’ll munch on this all week; the longer it sits, the better. I also like to add an extra drizzle of the chipotle dipping sauce right on top before diving in! I bet you won’t be able to have just one serving 🙂

You’ll need:
1 medium red onion
1 red bell pepper
1 can of whole kernel corn
1 ripe avocado
1/2 a cucumber
1 can of red kidney beans
salt and pepper to taste
1/4 cup (or more!) Terrapin Ridge Farms chipotle dipping sauce
About 1/4 cup olive oil
Half a bottle of any balsamic dressing
Mix all ingredients together and let sit at least 30 minutes in the fridge before inhaling so the flavors can marry.
