Happy Saturday, everyone!
If you love brunch and breakfast half as much as me, you have to try this fail-proof “Pop-Tart”! To describe it in three words: buttery, flaky, satisfying. There couldn’t be an easier crowd-pleasing recipe, and there’s very little cost and clean up necessary which makes it all the better.
Here’s what you’ll need:
6 eggs + 1 for an egg wash before baking
six slices of your preferred cheese (I used white cheddar)
salt and pepper to taste
1/4lb sliced ham (I used a honey glazed)
2 containers of Pillsbury Crescent rolls–the flat puff pastry type
Pre-heat your oven to 375 degrees
Cook all six eggs until they are just barely done. You want them a little runny because they’ll continue cooking in the oven.
On a 5 x 7 baking pan, roll out the first puff pastry.
Layer on your ham and cheese.
Layer on your eggs, seasoning with salt and pepper lightly
Add the second puff pastry roll on top and press the edges together with a fork, similar to crimping a pie crust.
Prick the top of the pastry with a fork to release steam.
Right before baking, egg wash the top of the pastry with the remaining egg.
Sprinkle with salt and pepper.
Bake for 20 minutes or until golden brown.
When slightly cooled, slice into “even” squares (hah!)
Serve and enjoy! I ate mine with hot sauce but they’d be great with avocado.
Why I loved this dish:
It’s delicious, versatile, and so easy to eat! No silverware needed = fewer dishes to clean. The next time I make it I might try a veggie scramble or something sweet like goat cheese and fruit spread.
Yum! If you try it, let me know your variation and how it turned out. Thanks for stopping by! You can always follow along more of my journey on Instagram at @cobbleandbrick. Hope to see you there!
